Mango Pineapple Sorbet

This fresh, fruity dessert can be whipped up in just a few minutes and is naturally dairy and sugar free! No ice cream machine required!

All you need is some frozen mango and pineapple and some canned coconut milk.
And a food processor – that is key!

Put about two cups of frozen mango and pineapple chunks into the food processor and add about 1/3 cup of coconut cream (the thick stuff at the top of the can!). Blend on high until the consistency is smooth like soft serve ice cream. You may need to add more coconut milk from your can and stop to scrape down the sides of the food processor a couple of times.
Once blended you can enjoy your dessert immediately or freeze it in a covered dish for later. Remember to get it out of the freezer 20-30 minutes before serving though or it will be too hard to scoop!

You can use this same recipe with other frozen fruits too – like berries or banana. You could also add in cinnamon or chocolate chips or peanut butter to create your own delicious mixtures!
